Gajar Halwa

Gajar Halwa, also known as Carrot Halwa, is a delicious Indian dessert made with grated carrots, milk, sugar, and ghee (clarified butter). Here's a simple recipe to make Gajar Halwa at home:

Ingredients:

  • 1 kg carrots, peeled and grated
  • 1 liter whole milk
  • 1 cup sugar
  • 1/2 cup ghee
  • 1 tsp cardamom powder
  • 1/4 cup chopped almonds or cashews (optional)
  • 1/4 cup raisins (optional)

Instructions:

  1. In a heavy-bottomed pan or kadhai, heat the ghee over medium heat.

  2. Add the grated carrots and sauté for about 5 minutes, stirring frequently.

  3. Add the whole milk to the pan and bring to a boil. Reduce the heat to low and let it simmer for about 30 minutes, or until the carrots have softened and the milk has thickened.

  4. Add the sugar and stir until it has dissolved. Continue cooking on low heat for another 10-15 minutes, or until the mixture has thickened and the liquid has been absorbed.

  5. Add the cardamom powder and mix well.

  6. If using, add the chopped nuts and raisins and stir.

  7. Serve hot or cold, garnished with more chopped nuts or a sprinkle of cardamom powder.
