Ingredients:
- 1 kg carrots, peeled and grated
- 1 liter whole milk
- 1 cup sugar
- 1/2 cup ghee
- 1 tsp cardamom powder
- 1/4 cup chopped almonds or cashews (optional)
- 1/4 cup raisins (optional)

In a heavy-bottomed pan or kadhai, heat the ghee over medium heat.

Add the grated carrots and sauté for about 5 minutes, stirring frequently.

Add the whole milk to the pan and bring to a boil. Reduce the heat to low and let it simmer for about 30 minutes, or until the carrots have softened and the milk has thickened.
