Saffron Rice

Saffron Rice

Ingredients:

  • 1 cup of basmati rice
  • 2 cups of water
  • 1/4 teaspoon of saffron threads
  • Salt, to taste
  • 1 tablespoon of olive oil

Instructions:

  1. Rinse the rice in cold water until the water runs clear.
  2. Soak the saffron threads in 2 tablespoons of warm water for 10-15 minutes.
  3. In a pot, bring 2 cups of water to a boil.
  4. Add the rice and salt to the pot, and stir.
  5. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is tender and the water has been absorbed.
  6. In a small pan, heat the olive oil and add the saffron threads along with the water in which they were soaked.
  7. Cook the saffron for 1-2 minutes, stirring constantly.
  8. Pour the saffron mixture over the cooked rice, and stir gently to combine.
  9. Cover the pot and let the rice sit for 5-10 minutes before serving.
  10. Fluff the rice with a fork before serving.

Note: Saffron is a strong spice, so a little goes a long way. You can adjust the amount of saffron used in this recipe to your taste. Additionally, you can add chopped nuts, raisins, or diced vegetables like carrots and peas to the rice to add extra flavor and texture.
