For the Dough:
- 1 cup rice flour
- 1 cup water
- 1 tsp ghee (clarified butter)
- A pinch of salt
For the Filling:
- 1 cup grated fresh coconut
- 3/4 cup jaggery (grated)
- 1/4 tsp cardamom powder
- A pinch of nutmeg powder (optional)
- A pinch of saffron strands (soaked in 1 tbsp warm milk)
- 1 tbsp chopped nuts (cashews, almonds) - optional
Instructions:
1. Prepare the Dough:
- In a pan, bring 1 cup of water to a boil. Add a pinch of salt and 1 tsp of ghee.
- Reduce the heat, and gradually add the rice flour, stirring continuously to avoid lumps.
- Cover and let it steam for 2-3 minutes. Remove from heat.
- Knead the dough while it's still warm until smooth and pliable. Cover it with a damp cloth and set it aside.
2. Prepare the Filling:
- In another pan, heat the grated coconut and jaggery on low flame until the jaggery melts and blends well with the coconut.
- Add cardamom powder, nutmeg powder, and saffron milk. Stir well.
- Cook until the mixture thickens slightly. Add chopped nuts if using.
- Remove from heat and let it cool.
3. Assemble the Modak:
- Take a small portion of the dough and shape it into a ball. Flatten it into a small disc.
- Place a spoonful of the filling in the center.
- Carefully gather the edges of the disc and bring them together at the top, pinching to seal the modak.
- Repeat with the remaining dough and filling.
4. Steam the Modaks:
- Grease a steamer plate with ghee. Place the modaks on it.
- Steam the modaks for about 10-12 minutes on medium flame until they turn glossy.
- Remove and let them cool slightly before serving.
