Moong Daal Halwa

Moong dal halwa is a popular Indian dessert made from moong dal (split mung beans), ghee, milk, sugar, and flavored with saffron, cardamom, and nuts. Here's a recipe for Moong dal halwa with saffron:

Ingredients:

  • 1 cup moong dal (split mung beans), washed and soaked in water for 4 hours
  • 1/2 cup ghee
  • 1/2 cup sugar
  • 2 cups whole milk
  • A pinch of saffron strands
  • 1/2 tsp cardamom powder
  • 1/4 cup chopped almonds or cashews

Instructions:

  1. Drain the soaked moong dal and grind it to a coarse paste without adding water.
  2. In a heavy-bottomed pan or kadhai, heat the ghee over medium heat.
  3. Add the ground moong dal and sauté for about 10-15 minutes, stirring frequently, until it turns golden brown and fragrant.
  4. In another pan, heat the milk and saffron strands over medium heat, until it comes to a boil.
  5. Add the boiled milk to the moong dal mixture and stir well.
  6. Add the sugar and stir until it has dissolved.
  7. Continue cooking on low heat for another 20-25 minutes, or until the mixture has thickened and the liquid has been absorbed.
  8. Add the cardamom powder and mix well.
  9. If using, add the chopped nuts and stir.
  10. Serve hot or cold, garnished with more chopped nuts or a sprinkle of saffron strands.
