Ingredients
- Ghee - 1 cup,
- Semolina aka sooji - 180 gms,
- Cardamom Powder - 1/2 tsp,
- Almonds - 1 tbsp,
- Cashews - 1 tbsp,
- Raisins - 1 tbsp,
- Pistachio - 2 tbsp,
- Kesar Milk - 2 tbsp,
- Milk - 2 glasses,
- Sugar - 1 cup
Recipe:
- Heat 1 cup of ghee in a non-stick pan. Add sooji and mix both ghee and suji well.
- Now roast sooji in ghee on high flame until you see bubbles. This will take a little more than a couple of minutes. You will also smell the fragrance of ghee and sooji while roasting.
- Now add cardamom powder, almonds, cashews, raisins, pistachios and Kesar milk. Roast dry fruits with suji until aromatic.
- Thereafter add milk gradually as per requirement. Mix well and cook until the water in the milk evaporates. The mixture will become dry. Add milk again if required.
- Finally, add sugar for sweetness. Cook until the water in the milk (if added a second time) and sugar evaporates.
- Once the water content in the mixture evaporates the ghee will start separating from suji. Now put off the flame.
- Your Kesar Sooji Halwa is ready. Serve hot. Enjoy 😃
